A simple delicious recipe involves ampalaya, kamatis, and scrambled egg, tossed and fried together: ginisang ampalaya! Ginisang ampalaya is also good source of vitamins, minerals, and protein!

Not everyone loves the bitter taste, so some home cooks add a bit of sugar, others put the freshly-sliced ampalaya in water for a few minutes before cooking, others “wash” the ampalaya in a mix of salt and water, others blanch it, while others just leave it alone and embrace the bitterness ampalaya has to offer. Sometimes bitter is better!
