Layers of sweet, creamy, crumbly, deliciousness await you in the refrigerator. Though it has many names depending on which home you visit, Mango Graham, Mango Float, Ref Cake… is quite simple to make.
Crushed graham crackers (pronounced gra-ham in Filipino, or “gram” in other countries), ripe mangoes, creme, condensed milk and a refrigerator are all you need to make magic happen in your fridge or freezer.
It is said to have been inspired by crema de fruta, another cool cake made with layers of sponge cake, custard or whipped cream, gelatin or gulaman, and different preserved or fresh fruits, including mangoes, pineapples, and cherries.
It’s no surprise that mango graham cake was born either way… out of sweet simplicity. If you haven’t tried this, you’ll be just as pleasantly surprised by avocado graham cake!
