Inunun, Inun-unan, or Paksiw na Isda is an age-old recipe with at least two basic elements: vinegar and fish.
It can vary with delicious additions like ginger, soy sauce, sugar, kamatis, eggplant, sitaw or batong, and others. But like adobo, this classic recipe has a base of simple ingredients.

Being an island nation with 60% of Filipinos living at or near a coastline, and 10 of our largest cities at the coast (Philippines Environment Monitor, 2003 World Bank), it is no surprise that Inunun is common all over the country.
