The essence of eating and utilizing almost every single part of an animal can be found in delicious Dinuguan or Dugo-dugo.
It is typically made with chopped pork innards and meat, stewed in a broth of cooked pork blood. It is further flavored by certain ingredients depending on the region, including chilis, sugar, vinegar, coconut milk, ginger, and more.
Though delicious, many Filipinos refrain from eating Dinuguan for religious or dietary reasons, so there are also vegan versions too. AstigVegan has a recipe for a healthy Vegan Dinguguan on her website, using oyster mushrooms, cubed tofu, black beans, vinegar and activated black charcoal!
