Atsara or achara is the pickling of an ingredient, today primarily associated with the pickling of shredded or julienned green or unripe papaya in a vinegar and sugar solution.
Recipes and names vary for “atsara ng papaya”, but if one thing is certain, it is a wonderfully sweet and sour dish to have in any kusina.
